Black Berries

  4. Blackberries are meant to be good in the prevention of cancers

 

 

 

 

 

Blackberry Barbecued Ribs

 

1 Rack of Pork Ribs (4-5lb)

12 oz of Blackberry Jam

4 fl oz of Tomato Ketchup

4 oz of Brown Sugar

2 tsp of Minced Ginger

Sea Salt and Black Pepper

 

Pre Heat Oven 350 f 180c Gas 4

 

In a food processor blend the jam, ketchup, sugar, ginger and salt pepper, then place into a saucepan, bring to the boil, and cook for 2-3 mins stirring continually, remove from the heat

 

Rinse ribs and pat dry, trim and discard any excess fat, place on a baking tray and bake for 40 mins, turning over after 20 mins ) don’t bake any longer or ribs will dry out

 

Baste one side of the ribs with 1/3 of the sauce and cook for further 10 mins sauce side down and repeat with the other side

 

Serve with a nice salad or baked potato with the remaining 1/3 of the sauce for dipping

 

 

 

Poached Chicken Breasts with Blackberry Cabernet

 

2 cups water

1 cup of dry white wine

1 bay leaf

1 Onion Chopped

1 Carrot Chopped and Peeled

Leaves from a celery stalk

½ tsp of salt

Ground Black Pepper

6 chicken breasts cut in half

 

For The Sauce

8 oz of Black Berries

3 tbls of Olive Oil

1 chopped onion

3 tbls of sugar

8 fl oz of Cabernet Sauvignon Wine

 

In a large pan place the white wine, water, carrot, coarsely chopped onion, celery leaves, bring to the boil and simmer for 5 mins so as to intensify the flavors

Add the chicken pieces, bring back to the boil and simmer for 15-20 mins ensuring the chicken is fully cooked

 

For the sauce

Sweat of the onions in the olive oil in a pan without color, add the sugar and wine and black pepper, simmer sauce until ½ its original quantity, add the blackberries and cook for further 4-5 mins use to mask the chicken

 

 

 

Blackberry Cream Pie

 

8 oz of Sweet Paste

32 oz of Blackberries

2 beaten eggs

6oz of Sugar

4 tbls of Flour

Pinch of Salt

1 TSP of Vanilla Essence

8 fl oz of Cream

 

Pre Heat Oven 400f 200c gas 6

Line a 9 inch Flan Ring with the pastry

Place blackberries into the lined flan ring

Mix the Eggs, sugar, flour, salt and cream and pour over the blackberries

Bake for 30-40 mins or until the filling has set

Serve warm

 

 

 

 

 

 

 

 

 

 

 

Blackberry Sour Cream Coffee Cake

 

6 oz of Softened Butter

2 oz of Sugar

2 eggs

6 oz of Soured Cream

1 tsp of Vanilla Essence

2 oz of Flour

1 tsp of Baking Powder

1 tsp of Ground Cinnamon

Pinch of Salt

6oz of Chopped Walnuts

8 oz of Blackberries

 

Pre Heat oven 350f 180c gas 4

Oil a 10inch spring form Baking Pan and sprinkle with sugar

In a food processor or large bowl mix the butter and sugar until nice and creamy, add the eggs one at a time, now add the sour cream and vanilla essence and mix well

 

In another bowl combine the flour, cinnamon, baking powder and salt (sieve 3 times) now add flour mixture to butter mixture in stages not all at once, mixing thourelly each time, now add the walnuts and blackberries

 

Pour mixture into your prepared dish and bake for about 40 mins

 

 

 

Blackberry Upside Down Cake

Topping

2oz of Butter

4 oz of Brown Sugar

1 ½ tsp of Lemon zest

2oz of Chopped Mixed Nuts

24oz of Blackberries

 

Pre Heat oven 350f Gas4 180c

 

In a 10 inch cast iron frying pan or 9×2 cake tin place over a low heat add butter and melt, stir in sugar until blended, remove from the heat and sprinkle in lemon zest, chopped nuts and arrange blackberries decoratively leave to one side

 

Cake

8 oz of self raising flour

6 oz of sugar

1 ½ tsp of baking powder

Pinch of salt

1 egg

4 fl oz of milk

2 oz of softened butter

2 oz of lemon zest

1 tsp of lemon juice

1 tsp of vanilla essence

 

In a large bowl combine the flour, sugar, baking powder and salt, add egg milk and butter and mix well, add the lemon zest and juice and mix, add vanilla essence and mix

Now poor mixture over the blackberries arranged earlier in the pan and bake for 40-50 mins

Cool slightly and turn out onto a plate

 

Apple Slice

 

12 oz Flour

12 oz of Coconut

4 oz of Caster Sugar

185g Melted Butter

1 Egg

425g of Peeled cored, Sliced and lightly sautéed Apples

 

Pre Heat Oven 180c 350f Gas 4

 

Lightly grease a baking try 18 x 28cm and line with grease proof paper

 

In a large bowl mix together the flour sugar and coconut, mix in the butter and egg, and now press half the mixture into your prepared tin

 

Now place apples on top of mixture in the tin and then cover the apples with the remaining mixtures applying it like a crumble

 

Bake for 35-40 mins until golden brown. Let it cool in the dish, turn out and cut into squares

 

Serve warmed or cold with fresh cream or ice cream

 

 

 

 

 

 

 

Maple Apple Jam

 

16 peeled and chopped Apples

12 fluid oz of Maple Syrup

16 fluid oz of Apple Cider

1 tsp of Cinnamon

1 tsp of lemon juice

 

Combine all the ingredients into a heavy based pot, Bring to the boil, continue to boil until the mixture thickens (about 10 mins) The way to test if jam is ready is place a small piece on a cold plate if it begins to hold shape its ready

Then remove from the heat and skin of any foam

 

Let it cool and ladle into sterilized jam jars seal.. this will make 12 pints of jam approx
