Stir It Up : Recipes for Budget Restricted



In this episode of Stir It Up, chef and retired doctor Paula Gilvarry meets  Shupai who arrived to Ireland from Malawi in 2006. She is now in her final year of a four-year degree in Early Childhood Care and Education. Can Paula help this busy student get more value to money when it comes to cooking food?


Foil Baked salmon

Ingredients:

1 ½ lb piece of salmon fillet or 4 , 6 ounce pieces

Chopped garlic

Grated ginger

Half a lemon

Method :

First take a sheet of foil large enough to wrap the fish in, and lay it over a shallow baking tin.

Wipe the pieces of salmon with kitchen paper and place on the foil. Then place the chopped garlic, grated ginger and juice of half a lemon over the fish and season with salt and pepper.

Then bring the foil up either side, then pleat it, fold it over and seal it at the sides. .Pull the foil in the middle to tent over the fish

All this can be done in advance, but when you need to cook the salmon, pre-heat the oven to gas mark 4, 350°F (180°C) and bake the salmon on a high-ish oven shelf for 20 minutes exactly.
