Stir it up – Recipes for the elderly!



In this episode of Stir It Up, retired Doctor and chef Paula Gilvarry meets, Margaret, an elderly lady living on her own. Presenter Paula embarks on a quest to help Margaret eat more nutritious meals and bring the spark back into her cooking.

Poached Salmon

Ingredients

1 piece salmon approx. 5ounces

Juice half a lemon

1 scant teaspoon honey

Steps

1) Put salmon on a plate, dry with kitchen towel and squeeze over lemon juice and drizzle with honey.  Cover with a second plate.

2) Leave 20 minutes. Microwave on high for 2 minutes. Rest for two minutes.

3) Serve with boiled broccoli and brown rice. Drizzle the juices from the fish on the rice.

4) Cook second piece of salmon and make fish cakes for freezer.

6) Bake two medium potatoes

7) Cook and cool one piece salmon

8) Mash potatoes, add the yolk of an egg and freshly chopped chives, mix in the cooled flaked salmon.

9) Bag and freeze some if too many for one meal.

10) Form with hands into cakes. Cook on a hot pan for 4-5 minutes. Turn and cook for  4 minutes on the other side.

11) Cool for two minutes then enjoy.

Slow cooker lamb stew. Eat one , freeze one

Ingredients 

2 lamb shanks

1 onion

2 cloves garlic

4 carrots

1 large parsnip

Stock 700 Mls of Marigold gluten free stock

Steps

1) Brown lamb shanks on a hot nonstick pan

2) Put in slow cooker

3) Add chopped vegetables , stock and black pepper.

4) Contents should be just covered with liquid

5) Cook on slow for 7  hours.

6) Cool .

7) Refrigerate and next morning skim fat. reheat half and freeze half.

Beef Goulash

Ingredients 

About 1 lb of rib steak in small pieces

I large onion

Punnet of mushrooms, wiped and sliced.

A pinch of dried sage.

Steps 

1) Fry meat in batches in pan. Add each batch to a heavy based saucepan.

2)Fry onion and mushrooms . add onion to saucepan and sage and stock.

3)Simmer for an hour. Add mushrooms and simmer for 30 minutes

4)This can also be done in slow cooker. Add meat first and as a variation fry two teaspoons of paprika with the onion over low heat.

5)Put meat and spiced onions in slow cooker

6)Add a tin of tomatoes and some stock. ( about 600 ml or enough to just cover the contents)

7)Cook on low for 8 hours.

Serving Suggestion –  Serve with potatoes or brown rice.
