Fast Food

 

 

What is Fast Food?

 

We have a tendency to associate fast food to the local chipper or the world famous fast food chains that have opened up around the country. These are fine but in my opinion taken in moderation. In some cases they rely on the deep fat fryer as there method of cookery, to much of the deep fat fryer can produce Trans fatty assets that form into blobs in your system and can lead to overweight and clogging of the arteries.

 

Fast food can be something totally different, we all live in a busy world, we have working couples working hard to meet there commitments in world where property costs a fortune to buy.

Instead of loosing 45 minutes to an hour traveling to a chipper quing waiting for your food to be cooked, and then traveling home hoping it will be hot when you get there why not use the time to prepare something at home

 

 

Meals that can be prepared between 5 mins – 45 mins

 

Eggs: Eggs are very versatile you can cook up an evening tea of scrambled eggs in minutes, poached eggs only take minutes or why not a nice omelet

 

Omelets are very versatile; you can fill them with what ever you like

 

Secret of an Omelet

  1. Have a Omelet pan or good cast iron pan as this will conduct heat better
  2. Ensure Pan is Roasting hot before you add any egg
  3. Its nicer to add your filling to a folded omelet near the end and not to beat it up with the egg
  4. Only flat unfolded omelets should be finished of in an oven or a grill
  5. Omelet will take from start to finish no more than 8 minutes

 

 

 

Pasta

 

Pasta Dates back to the ancient Greeks and Romans who it is claimed, discovered some form of flattened dough that was cut into strings.

Apicius a Roman writer from the First Centerury A.D. describes pasta made to enclose timballi and pies otherwise known today as lasagna

 

Simple Pasta Dough

10oz of Pasta Flour

1 Teaspoon of Salt

2 eggs beaten up

 

Green Pasta

Add 30g of cooked puree of spinach and add to eggs

 

For Tomato Pasta

Add Teaspoon of Tomato puree to the eggs

 

For a whole meal pasta

Substitute 2.5oz of whole meal flour for the white

 

You can make the pasta by hand by placing flour in a bowl mixed with the slat, make well in the centre and add wet ingredients gradually until a smooth ball is formed, you can also make the dough in a blender

 

 

Now a pasta machine is a great tool but if you don’t have one you can use a rolling pin

When using a rolling pin, place dough onto floured surface, and roll from the centre out, to roughly about 3mm in depth, cut into whatever shape you like

Important when you have cut your pasta into required shape place on a floured towel for about 5 minutes to dry

Boil in salted water for approx 7-9 minutes

 

There are about 500 different shapes used in pasta maybe more, you can have plain pastas. Stuffed pasta i.e. Ravioli, Cannelloni, etc

 

Meat Chicken and Fish

 

Chicken is very versatile, Take a breast of chicken, flatten it between two sheets of plastic, place into a bowl, cover with olive oil, squeeze of lemon or lime, some chopped coriander, a few cloves of chopped garlic, leave over night, next day, fry on a pan for about 4 mins either side until fully cooked, serve with some boiled rice and chopped salsa

 

Take 6oz of diced cod fillet, roll through some Cajun spices place on a pan with some olive oil, and add some strips of vegetables and about 0.25pint of coconut milk, cook for about 5 mins serve with some rice

 

Strips of Beef maybe 6oz, fry with some ginger, onion, garlic and vegetables, add some teriyaki sauce or oyster sauce, or soy sauce serve with some softened noodles
